3. Constant temperature and humidity
The idealist storage temperature for red wine is between 12℃-16℃, while for white wine and champagne, it is 10℃-12℃. When the temperature is too high, it will affect the acidity of the wine; when the temperature is too low, it will lock the aroma and affect the growth of wine. As a qualified wine cellar, the wine cellar temperature should be stable between 8℃ to 18℃ all the time.
The storage of wine also requires highly in humidity. A dry environment will cause the loss of water in the cork, and the air can easily enter the wine, which causes the oxidization and leak of wine. Humid environment, significantly when the humidity exceeds 70%, the corks and labels are prone to damp, mold, and rot, which will germinate bacterium and affect the wine's quality. Generally, 60%-70%RH is the most suitable storage humidity.
